This Cashew Chicken recipe consists of cashew chicken, stir-fried kailan (Chinese broccoli), and pumpkin soup.
The chicken dish is rich in protein, while kailan and pumpkin provide a good source of fibre, vitamins, and minerals. Brown rice helps to release energy gradually for sustainable energy throughout training.

Cashew Chicken

4 pcs | Cashew nut |
½ tsp | Olive oil |
1 tbsp | Chopped garlic |
2 slices | Ginger |
1/3 cup / 87.3g | Chicken breast |
¼ cup | Water |
¼ tsp | Rasa Sifu™ All in One Seasoning |
1 tbsp | Oyster sauce |
1 piece | Dried chilli, cut into small pcs (optional) |

- Preheat the oven to 180oC. Roast the cashews on a baking sheet until golden brown about 5-7 minutes or can use normal wok, toast on small fire, stir frequently until golden brown.
- Heat oil over medium high heat in a skillet or wok. Add the garlic and ginger and cook for a while.
- Add the chicken and cook for 2 minutes or until lightly brown.
- Add water and cook for 4-5 min over high heat until broth mostly evaporates.
- Add the Rasa Sifu™, oyster sauce, dry chillies and cashew nuts. Cook for 1-2 minutes.
- Add spring onion and white sesame for garnishing.
Stir Fried Kailan

1 tsp | Olive oil |
1 tbsp | Chopped garlic |
3 pcs | Button mushroom, sliced |
3 slices | Carrot, shredded |
2 stalk (120g) | Kailan cut |
¼ cup | Water |
½ tsp | Rasa Sifu™ All in One Seasoning |

- Saute chopped garlic with olive oil for 1 minute.
- Add in mushroom and carrot, cook for 1 minute.
- Add in Kailan, water and Rasa Sifu™. Let it cook for 1-2 minutes. Not to let it to overcook.
Pumpkin Soup

1 small | Tomato, cubed |
2 tbsp | Pumpkin, cubed |
1/3 tsp | AJI-NO-MOTO® |
¼ tsp | Salt |
250 ml | Vegetable stock |
Some | Coriander, chopped |

- Add all ingredients in a pot. Let it boil for 2-3 minutes.
- May add in chopped parsley for garnishing
