Piri- Piri Chicken


Ingredients: Chicken

4 nos Shallot
6 cloves Garlic
½ cup Coriander leave
4 tbsp Ginger
2 nos Chili padi
1-2 tsp Hot sauce
½ cup Olive oil
¼ cup Lime juice
1 tsp TUMIX® Chicken Stock
2 tsp AJI-SHIO® Flavoured Pepper
900 g Chicken meat

Ingredients A: Sauce

100 g Salted butter
6 tbsp Chopped cilantro
5 clove Garlic, chopped
4 tbsp Hot sauce
4 tbsp Lime / lemon juice
  1. Blend the shallot, garlic, coriander leave, ginger and chilli padi.
  2. Add hot sauce, olive oil, lime juice, TUMIX® Chicken Stock and AJI-SHIO® Flavoured Pepper.
  3. Rub chicken with marinade and chill for 5 hours.
  4. Heat some oil, panfry or grill the chicken until golden.
  5. Combine all ingredients (A), cook on slow fire until thicken.
  6. Pour warm glaze over chicken and serve.
