Chicken in Chinese Style Coleslaw Bento
Ingredients
500 ml | Water |
1 stalk | Spring onion |
2 slices | Ginger |
1 piece | Chicken whole leg |
2 cups | Ice cubes |
1 stalk | Spring onion, chopped |
1 stalk | Coriander leaves, chopped |
A little | Toasted sesame seeds |
1 | Kiwifruit, sliced |
3 | Grapes, halved optional |
2 | Strawberries, halved |
Ingredients A: seasoning
¼ tsp | Salt |
¼ tsp | AJI-SHIO® Flavoured Pepper |
1 – 2 drops | Sesame oil |
Ingredients B: Dressing
3 tbsp | Plum sauce |
2 tbsp | Lime juice |
1 tsp | Olive oil |
To taste | Salt |
1 – 2 sachets | Pal Sweet® Low-Calorie Sweetener |
Ingredients C: coleslaw
70 g | White cabbage leaves, julienned |
70 g | Purple cabbage leaves, julienned |
60 g | Japanese cucumber, halved & seeded, julienned |
80 g | Carrot, finely shredded |
Method
- Bring water to a boil. Add in spring onion, ginger and seasoning (A). Put in chicken and cook to a boil. Reduce the heat, cover and cook for 20 – 25 minutes or until chicken is cooked.
- When chicken is done, remove and plunge into a basin of ice-cubes and soak for 10 minutes. Remove and set aside. Cut chicken into bite-sized pieces.
- Combine dressing ingredients (B) in a bowl then pour over all vegetables (C). Toss to mix well. Chill salad.
- Arrange coleslaw on bento packs and top up with the chicken. Sprinkle over with chopped spring onion, coriander and sesame seeds. Serve with fruits by the side (optional).
