Ingredients
Ingredients A:
500 g | Beef meat, sliced |
Enough | Cooking oil |
1 stalk | Lemongrass, bruised |
1 stick | Cinnamon stick |
4 pcs | Cardamom pods |
2 pcs | Star anise |
1 no | Potato, peeled, wedges and fried |
1 tbsp | Tamarind juice |
1 tbsp | Oyster sauce |
1 tbsp | Dark soy sauce |
7 pcs | Bird eye’s chilli, bruised |
1 no | Holland onion, sliced ring |
1¾ tsp | AJI-NO-MOTO® |
3/4 tsp | Salt |
Ingredient B: marination
2 tsp | Coriander powder |
1 tbsp | Oyster sauce |
2 tsp | Sweet soy sauce |
Ingredient C: blend
2 nos | Shallot |
3 pips | Garlic |
2 inch | Ginger |
1 tbsp | Ground chili paste |
Some | Water (if necessary) |
Method
- Marinade beef with ingredients (B) for 30 minutes and above. Set aside.
- In a wok, heat the oil and stir fry all blended ingredients (C) with lemongrass, cinnamon stick, cardamom pods and star anise until fragrant and yellowish.
- Add the marinated beef to the wok. Let it cook to tender, add water if necessary.
- Add the fried potato, tamarind juice, oyster sauce, dark soy sauce, bird eye’s chilli and onion slice.
- Season with AJI-NO-MOTO® and salt. Ready to serve.
Tips:
To ensure the beef is tender, the beef can be partially boiled beforehand. Then marinate it afterward. (as different parts of meat may have different toughness levels).
Tips
With the application of AJI-NO-MOTO®, it is able to reduce about 13% of sodium while maintaining the same deliciousness of the dish.
